4 Medium size cucumbers
1/3 bunch of cilantro
3 cloves of garlic
1 small red onion
1/2 small white onion
1 Tbl of white vinegar
Juice of 1 lime
1 Tbl Island Time
2 tsp of salt or to your liking
1/2 cup of greek yogurt
Peel and halve your cucumbers. Working in batches that will fit in the blender (we use a Vitamix), blend half of your cucumbers until smooth and pour in a big bowl. Blend the second half of your cucumbers along with the cilantro, garlic, red and white onion until smooth as well, and then pour the contents into the same bowl. Stir together to combine.
Add remaining ingredients except salt and yogurt. Stir well.
Whisk in the Greek yogurt, then slowly add the salt to your liking.
Chill for 30 minutes then serve and enjoy.
