Ingredients
- 2 tomatoes

- 3 Tbls of Suave Agave
- 4 Zucchini, split lengthwise
Easy, Cheesy, and Packed with Flavor
These zucchini boats are the perfect mix of easy and satisfying—loaded with seasoned beef, melted cheese, and just enough freshness to keep things balanced.
Finished with Suave Agave, they bring a bold, slightly sweet and savory flavor that makes this simple dish anything but boring.
Preparation:
- Preheat oven to 350°F.
- Heat olive oil in a pan over medium heat. Add garlic, pepper, and onion, and sauté for a few minutes until softened.
- Add ground beef and season with Suave Agave. Cook until browned, stirring to combine. Taste and adjust seasoning as needed. Add a pinch of salt if desired.
- Transfer mixture to a bowl and allow to cool slightly. Stir in 1/2 cup of cheddar cheese.
- Cut zucchini in half lengthwise and scoop out the centers to create boats.
- Lightly oil a sheet pan and arrange zucchini halves. Fill each with the beef mixture.
- Bake for 30 minutes.
- Remove from oven, sprinkle remaining cheese on top, and return to oven for another 10 minutes, until melted and bubbly.
Pro Tip:
Don’t over-scoop the zucchini—leave a little structure so they hold their shape while baking.
Make It Your Own:
- Swap beef for ground turkey or chicken
- Add marinara sauce for a more Italian-style version
- Mix in cooked rice or quinoa for extra bulk
- Top with fresh herbs like parsley or basil
What To Serve It With:
Serve with a simple salad, roasted vegetables, or garlic bread. These also work great as a lighter standalone meal.
