Savory Sweet Potato Hash (GF)

Sweet potato hash


12oz. Corned beef, roughly chopped

1 ea. sweet potato

3 ea. small red bliss potato

1/2 ea. red onion

1 ea. shallot

2oz. Melted butter

1/4 cup apple juice

1 Tbl. Maine(ly) Maple seasoning

    This is a great way to use up a piece of leftover corned beef. Cut potatoes into 1/2"

    pieces. Heat butter in a heavy pan over low heat, meanwhile, chop shallot and onion

    Add to the pan, and turn up heat to medium. Sauté until translucent, and add corned

    beef and potatoes. Don't stir too much, a little browning only helps the flavor. Add apple

  • 5

    juice and season. Lower heat and simmer, stirring occasionally. You want the liquid to
    slowly cook out and soften the potatoes. Keep it on the heat until this happens.
