Fresh, Crunchy, and Ready for Anything
This easy marinated vegetable salad is exactly the kind of side dish you want hanging out in the fridge when dinner rolls around.
Fresh vegetables and crumbled feta get tossed with dressing, lemon, and It’s All Greek To Me for plenty of bright, savory Mediterranean flavor. Give it some time in the refrigerator and the vegetables soak up all that goodness while still keeping their crunch.
Preparation:
- Wash and thoroughly dry all of the produce.
- Cut the vegetables into roughly 1-inch chunks and place them in a medium bowl.
- Crumble the feta cheese over the vegetables, adding as much as you like.
- Pour the dressing over the vegetables and toss to evenly coat.
- Squeeze fresh lemon juice over the salad and season with It’s All Greek To Me, salt, and pepper.
- Toss everything together until well combined.
- Refrigerate before serving to allow the vegetables to marinate and the flavors to come together.
Pro Tip:
Give this salad some time in the refrigerator before serving. Even an hour of marinating lets the vegetables soak up the dressing, lemon, and seasoning while keeping plenty of fresh crunch.
Make It Your Own:
- Add chickpeas to make it a little heartier
- Toss in Kalamata olives for extra briny flavor
- Add fresh parsley or mint before serving
- Add extra feta because, really, who’s going to complain about that?
What To Serve It With
Serve alongside grilled chicken, steak, lamb, seafood, or burgers. It’s also a great make-ahead side for summer cookouts, potlucks, and weeknight dinners.
