  • 6 ea. Ripe tomatoes

  • 1 ea. Zucchini
  • 1/2 ea. Vidalia onion
  • 1/2 ea Red bell pepper
  • 1/2 c. Feta
  • 2 Tbl. Gluten-free breadcrumbs
  • 1 Tbl. U Wanna Pizza Me? seasoning

Juicy, Savory, and Stuffed with Flavor

These baked stuffed tomatoes turn a handful of simple vegetables into a seriously satisfying side dish.

Filled with sautéed zucchini, peppers, onions, and crumbled feta, then seasoned with U Wanna Pizza Me?, they’re savory, cheesy, and especially good when fresh tomatoes are at their peak.

Preparation:

  1. Preheat oven to 350°F.
  2. Core and hollow out the tomatoes, leaving enough of the exterior intact to hold the filling.
  3. Dice the onion, zucchini, and pepper.
  4. Heat a little olive oil in a skillet over medium heat. Add the vegetables and sauté until softened.
  5. Transfer the cooked vegetables to a bowl and stir in the crumbled feta.
  6. Season with salt, pepper, and U Wanna Pizza Me?.
  7. Add enough breadcrumbs to lightly bind the filling together.
  8. Spoon the vegetable and feta mixture into the hollowed tomatoes.
  9. Place the stuffed tomatoes in a baking dish and bake for about 20 minutes, or until the tomatoes are tender and the filling is heated through.

Don’t overdo the breadcrumbs. You only need enough to bind the filling—the vegetables and feta should still be the stars.
