- 2 Tbl. Gluten-free breadcrumbs

These baked stuffed tomatoes turn a handful of simple vegetables into a seriously satisfying side dish.
Filled with sautéed zucchini, peppers, onions, and crumbled feta, then seasoned with U Wanna Pizza Me?, they’re savory, cheesy, and especially good when fresh tomatoes are at their peak.
Preparation:
- Preheat oven to 350°F.
- Core and hollow out the tomatoes, leaving enough of the exterior intact to hold the filling.
- Dice the onion, zucchini, and pepper.
- Heat a little olive oil in a skillet over medium heat. Add the vegetables and sauté until softened.
- Transfer the cooked vegetables to a bowl and stir in the crumbled feta.
- Season with salt, pepper, and U Wanna Pizza Me?.
- Add enough breadcrumbs to lightly bind the filling together.
- Spoon the vegetable and feta mixture into the hollowed tomatoes.
- Place the stuffed tomatoes in a baking dish and bake for about 20 minutes, or until the tomatoes are tender and the filling is heated through.
Pro Tip:
Don’t overdo the breadcrumbs. You only need enough to bind the filling—the vegetables and feta should still be the stars.
