Baked Stuffed Tomatoes
Ingredients:
6 ea. Ripe tomatoes
1 ea. Zucchini
1/2 ea. Vidalia onion
1/2 ea. Vidalia onion
1/2 ea. Red bell pepper
1/2 c. Feta
2 Tbl. Gluten-free breadcrumbs
1 Tbl. U Wanna Pizza Me? seasoning
Preparation:
Core and hollow out tomatoes to allow enough room for stuffing. Dice onions zucchini and pepper and saute in a little olive oil until soft. Transfer to a bowl and add crumbled feta to the mix.
Season with salt and pepper then add enough breadcrumb to bind the mixture. Spoon into tomatoes and bake in a 350 degree oven for about 20 minutes or until soft. Serve as a side or over some field greens for a nice salad.
