Lemon-Dill Mashed Bliss Potatoes


1 1/2 pound red bliss potatoes, small sized
1/2 ea lemon thinly sliced into rings
4 Tbl butter
1 Tbl chopped dill
1 Tbl Veg-geez Louise seasoning
1 10oz box frozen peas with pearl onions
2 Tbl sour cream
1/4 cup half and half

1. Start the potatoes in a pot of cold salted water, and bring to a boil. Simmer for about 20 minutes or until a fork cleanly pierces.
2. Meanwhile, melt butter in a large sauté pan. Add lemon slices, peas, onions, seasoning and dill. Cook a few minutes, then remove from heat.
3. Drain potatoes, place into a large bowl. Add pea mixture to potatoes. Smash
potatoes around until just combined. Don't go crazy, we aren't making mashed potatoes, just broken up. Fold in dairy, season and serve.
