Maple-Glazed Winter Vegetables

Ingredients:
1 ea sweet potato
1 ea carrot
1 pkg diced butternut squash
1 pkg brussels sprouts
1/2 ea onion
1 ea parsnip
2 Tbl honey
1 Tbl grain mustard
1 tsp olive oil
3 Tbl. Maine(ly) Maple seasoning


Preparation:
Cut all vegetables into 1" pieces. Toss with olive oil, and all remaining ingredients. Place
into a covered baking dish and roast in a 400 degree oven for about 30 minutes, stirring
halfway through to ensure coating. Allow to rest a few minutes before serving.
