Southwestern Corn and Tomato Salad

A perfect side for the summertime, packed with fresh flavors of native corn and local tomatoes. This quick recipe may just become a staple for your future cookouts. We found this a great dish to showcase the southwestern flavors of Suave Agave.

Ingredients:

4 ears     Corn on the cob

1 pt.     Cherry tomatoes, halved

1/4 cup     Feta cheese

1 1/2 Tbl.     Suave Agave seasoning

Juice of 1 lime

    Begin this recipe by shucking the corn, then rub it with a little olive oil, and char it on a hot grill, turning frequently, until the kernels are nicely toasted. Remove from the grill and place in the fridge to cool.

    Meanwhile, in a medium bowl, blend together the cherry tomatoes, cheese, seasoning, and lime juice. Once the corn is cool enough to handle, cut the kernels off the cob and add them to the seasoned tomatoes. Mix well to combine, and enjoy. It doesn't get much easier.
