The Ultimate Clean-Out-the-Fridge Breakfast
These mini baked frittatas are about as flexible as breakfast gets.
Think of this recipe as more of a formula than a strict set of rules. Eggs, cheese, a little cream, The Works, and whatever meat, vegetables, or greens you have hanging around in the fridge can turn into an easy breakfast that’s ready to grab all week long.
They also travel well, reheat easily, and take most of the thinking out of breakfast before that first cup of coffee kicks in.
Preparation:
- Preheat oven to 350°F.
- Crack the eggs into a large mixing bowl. Add the cream and salt, then whisk just until the yolks and whites are combined.
- Stir in the cheese and set the egg mixture aside.
- Heat 1 tablespoon of olive oil or butter in a large sauté pan.
- Add your chosen fillings. For this version, cook the chopped bacon and breakfast sausage first, followed by the onion, bell pepper, and sliced cherry tomatoes.
- Add any garlic or greens toward the end of cooking. If using pea shoots or other tender greens, cook just until fragrant and wilted.
- Season the filling lightly with salt, then remove from the heat and allow it to cool for a few minutes.
- Stir the cooled filling into the egg mixture and season with The Works.
- Spray two muffin tins thoroughly with nonstick cooking spray.
- Divide the mixture evenly between the muffin cups, filling each about 3/4 full.
- Bake for 14 to 18 minutes, or until the eggs are puffed and mostly set. The centers should still have just a slight jiggle when the pan is gently shaken.
- Remove from the oven and allow the frittatas to cool in the tins for about 5 minutes before carefully removing them.
Pro Tip:
Let the cooked filling cool slightly before adding it to the eggs. Adding piping-hot ingredients can start cooking the eggs before they ever make it into the muffin tin.
Make It Your Own:
- Swap bacon and sausage for ham, turkey sausage, or leftover chicken
- Use spinach, kale, mushrooms, broccoli, or whatever vegetables need to be used up
- Try different cheeses like feta, Swiss, pepper jack, or goat cheese
- Add fresh herbs for even more flavor
- Skip the meat entirely for an easy vegetarian version
What To Serve It With:
Serve with toast, roasted potatoes, fresh fruit, or a simple green salad. They’re also perfect on their own as a quick grab-and-go breakfast or snack.
