Sante Fe Bean Dip

Will there or will there not be football? Nevertheless, we have a great coping mechanism for whatever the case may be, perfect for your next socially distanced party, or zoom meeting... a warmed creamy southwestern black bean dip. Check it out. Be prepared, this recipe will easily feed 4.

Ingredients:

1 can black beans

1 can of red beans

1/2 stick of cream cheese

1/2 cup of sour cream

1 whole onion chopped fine

2 cloves garlic chopped fine

1/2 4 Oz can green chilies

2 TBL Suave Agave

*Garnish* Jalapenos, avocado, shredded cheese, tomatoes

Preparation:

    Preheat oven to 350. Meanwhile, sauté onion, garlic, chilies in olive oil until onions are translucent on medium heat, about five minutes. Add 2 TBLsuave agave, along with 1/2 can of red beans and full can of black beans to pan. Add a pinch ofdevil dustif you dare... Cook on medium heat until bubbly. Pour in a blender or food processor and purée until smooth. Add cream cheese and sour cream to the blender. Blend to combine. Pour into a bowl. Add a 1/4 cup of frozen corn and chicken 1/2 cup of cheddar, stir in to combine. Spray cast iron or casserole dish with non stick, then pour mixture in.

    Bake for 30 mins, take it out and stir then put it back in for 15 minutes. Remove -from oven and allow to rest for 10-15 minutes. Get fancy and top with chopped tomatoes, scallions, pickled jalapeno, and shredded cheese. Consume with many tortilla chips.
