Chicken Parm Burgers

Chicken Parm Burgers

Try this easy recipe the next time you are craving chicken parm. It's a different, delicious and will wow anybody.

Here's what you need for the burgers:

  • 1lb of ground chicken. We love Bell & Evans ground chicken thighs but any ground chicken meat will do the trick.
  • 1/4 cup chopped parsley
  • 1/2 cup of oats
  • 2 Tbls heavy cream
  • 2 Tbls U Wanna Pizza Me?
  • 2 Tbls of your favorite marinara sauce
  • 1/4 cup of shredded mozzarella
  • 1 egg
  • dash of salt and pepper

Combine all ingredients in a bowl and mix together. Set aside.

You will also need:

  • sliced pancetta
  • 1 Tbl of finely chopped basil
  • 1/4 mayo
  • small wedge of lemon
  • dash of salt and pepper
  • arugula, sliced tomato, sliced onion (for the burger)

Mix mayo, basil, salt and pepper together. Squeeze the lemon and stir in. Set aside.

Sear pancetta until crispy on both sides then set aside. On the same pan, using all that delicious pancetta grease place 2 - 3 small burger forms on the pan. The mixture will feel very wet so working with wet hands is very helpful. Don't worry,  you don't need to add anything else. They will come out great! Cook until brown then flip. Once the burgers are brown on both sides and cooked through you are ready to create your burger.

This is where you can get creative. You can use a wrap, a sub roll, a burger bun or whatever you want! Spread the mayo on your bun and add the arugula and pancetta. Place your burger on top then top with tomato and onion or whatever else you like. Build it as you please and enjoy!
