Garlic-roasted pork loin

Ingredients:

2 lbs. pork loin, trimmed

4 clove garlic, sliced in 1/4" pieces

1 tsp. olive oil

2 sprig rosemary, chopped

2 sprig thyme, chopped

1 ea. lemon, zested

1 Tbl. olive oil

2 Tbl. Vampire Repellent seasoning

Preparation:

    Preheat oven to 375 degrees. Place pork on a roasting rack and stab the top of the roast with a paring knife halfway through the roast. Press the garlic slices into all the holes on the pork. Rub the entire pork loin with olive oil, then rub with lemon zest, herbs, and Vampire repellent.

    Roast on a sheet pan on the middle rack of the oven for about 45 minutes, or until it reaches an internal temperature of 145 degrees. Remove and cover with foil and allow to rest twenty minutes before service. Slice and serve with your favorite sides!
