Marinated Feta and Tomatoes

8 oz. feta cheese, cubed
1 pt. cherry tomato, halved
5 Tbl. lemon juice
4 Tbl. olive oil
1 Tbl. chopped basil
1 Tbl. chopped oregano
1 tsp. chopped mint
2 tsp. It's All Greek To Me seasoning

Place the feta cubes in a medium bowl and cover with olive oil and herbs, toss well. Add tomatoes, seasoning and lemon juice, then stir just until combined. Allow this salad to marinade overnight. Although this step is not required, the flavor dramatically improves when allowed to rest a while.
