Parmesan Roasted Potato Wedges


2-3 ea. Idaho potato, cut into 8 wedges longways

3 Tbl. extra virgin olive oil

1 cup panko breadcrumbs

1/2 cup Parmesan cheese

1 Tbl. flat leaf parsley, chopped

1 Tbl. U Wanna Pizza Me? seasoning

As needed, prepared tomato sauce

    Toss the potato wedges in olive oil, set aside

    Combine remaining ingredients except tomato sauce and mix well. Working in batches, toss the potatoes into the crumb mixture until well coated, place on a baking sheet. In a preheated 400 degree oven, bake wedges until well browned and crispy.

    About 30-40 minutes. In the meantime, warm some tomato sauce...perhaps a cup or two.

    Serve the wedges as a side dish, spooning some warmed tomato sauce over for a great dipping experience.
