Buffalo Chicken Meatballs (GF)

Buffalo chicken dip is great and all, but sometimes you want something with a little more… structure. Enter: buffalo chicken meatballs. These fiery little flavor bombs are gluten-free, ridiculously snackable, and packing serious heat thanks to Devil Dust—our superhot organic chili powder that doesn’t mess around.

Whether you’re hosting game day, feeding a hungry crowd, or just need a reason to sweat a little at dinner, these meatballs bring the fire and flavor. Think classic buffalo flavor with an extra kick in the pants. And yes, they play very well with ranch or blue cheese.

Ingredients:

1#      Ground chicken

1/3c     Hot sauce (we used Frank's)

1/3c     Crumbled bleu cheese

1/3c      Gluten-free panko breadcrumbs

2 pc      Celery, finely diced

2 pc      Scallion, chopped

1 ea.     Egg

1/4 tsp.     Devil Dust

 

Preparation:

1. Preheat oven to 425 degrees. In a medium mixing bowl, combine all ingredients, then mix well to evenly incorporate the flavors. 

2. Gather a sheet pan, and coat with pan spray. Wet hands, and scoop meatballs into 1.5-inch portions, rolling in your hands to form into shape before placing on the tray. Be sure to allow plenty of room between each meatball to promote even cooking.

3. Bake in a 425 degree oven for 25-30 minutes. Be sure to cook to an internal temperature of 165 degrees. Allow to cool for a few minutes before serving. Drizzle with hot sauce once they're plated. Feel free to serve them on their own, or with a bleu cheese dipping sauce. Enjoy!
