  • 1/2 cup Parmesan cheese
  • 2 Tablespoon Olive oil
  • 1 ea. Egg

These Mediterranean chicken meatballs are one of those recipes that prove easy dinner doesn’t have to mean boring.

They were even featured during one of Dave’s cooking segments on The Rhode Show, and for good reason. Everything gets mixed in one bowl, rolled into meatballs, and baked until golden and juicy. Clucking Awesome brings in the savory Mediterranean herb flavor, so there’s very little work between you and a seriously good batch of meatballs.

Preparation:

  1. Preheat oven to 425°F.
  2. Add all of the meatball ingredients to a medium mixing bowl.
  3. Mix gently until everything is just combined. Avoid overmixing, which can make the meatballs dense.
  4. Roll the mixture into small meatballs. If you prefer consistent sizing, use about a 1/3-cup measure for each portion.
  5. Arrange the meatballs on a baking sheet or baking dish, leaving a little space between each one.
  6. Bake for about 20 minutes, or until the meatballs are cooked through and reach an internal temperature of 165°F.
  7. Remove from the oven and allow them to rest for a few minutes before serving.

Pro Tip:

Mix only until the ingredients come together. Overworking ground chicken can make the finished meatballs firm instead of tender.

  • Add crumbled feta to the mixture
  • Mix in chopped spinach or fresh parsley
  • Serve with tzatziki for dipping
  • Turn them into pita sandwiches with tomato, cucumber, and red onion
  • Make a double batch for easy lunches throughout the week

What To Serve It With:

Serve with rice, couscous, roasted vegetables, a Greek salad, or warm pita with tzatziki. They also work really well as an appetizer with a simple dipping sauce.
