Baked Bean & Cornbread Cups


1 can baked beans

1 pkg. jiffy corn muffin mix

1 ea. egg

1/3 c. milk

1 Tbl. BBQ sauce

2 sl. Bacon, chopped

1 tsp butter

1/2 ea. onion, diced

1/2 ea. red bell pepper, diced

2 tsp. Hog Heaven seasoning

    Heat butter in a medium sauce pan. Add bacon and cook over medium heat until it
    begins to crisp. Add onions and peppers, and seasoning, cook until onions are soft. Add BBQ sauce and beans, mix well to combine. Remove from heat and reserve.

    In a separate bowl mix eggs, milk, and muffin mix per directions on box. Divide beans into four to six ramekins, then divide evenly and spoon corn mix over each of the ramekins.

    Bake on a sheet tray at 375 degrees for about 20-25 minutes or until corn bread is golden brown. Allow to rest for as few minutes before serving.
