Juicy Pork Chops with a Tangy Italian Twist

Pork chops and vinegar peppers are one of those combinations that just works—savory, rich pork balanced by bright, tangy peppers.

This version adds seasoned roasted potatoes and U Wanna Pizza Me? for plenty of Italian herb flavor, turning it into a hearty dinner that comes together in one seriously satisfying plate.

Preparation:

  1. Preheat oven to 375°F.
  2. Drizzle the potatoes with olive oil and season with U Wanna Pizza Me?. Roast for about 20 minutes, or until cooked through. Remove and set aside.
  3. Meanwhile, melt butter in a skillet over medium heat.
  4. Season the pork chops with salt and pepper. Add to the skillet and brown well on both sides.
  5. Transfer the pork chops to a baking pan and finish cooking in the oven for about 20 minutes, or until they reach an internal temperature of 145°F.
  6. While the pork cooks, add chopped garlic and onions to the same skillet used for browning. Sauté until fragrant and softened.
  7. Add the vinegar peppers and roasted potatoes to the skillet and toss everything together.
  8. Remove the pork chops from the oven and allow them to rest briefly.
  9. Plate the pork chops and spoon the warm potato and vinegar pepper mixture over the top. Mangia!

Pro Tip:

Don’t clean that skillet after browning the pork. The browned bits left behind add extra flavor to the garlic, onions, vinegar peppers, and potatoes.

Make It Your Own:

  • Use hot vinegar peppers for more heat
  • Add sliced Italian sausage for an extra-hearty version
  • Finish with fresh parsley
  • Add a splash of the pepper brine to the skillet for even more tang

What To Serve It With:

This is nearly a complete meal on its own thanks to the roasted potatoes. Add sautéed greens, broccoli rabe, or a simple Italian salad if you want something fresh alongside it.
