Crispy Edges, Buttery Layers, Big Flavor

These cast iron roasted potatoes are all about texture—tender layers on the inside with crispy, golden edges on top.

Seasoned with U Wanna Pizza Me, they bring a bold, herby, Italian-inspired flavor that turns a simple potato dish into something seriously craveable.

Preparation:

  1. Preheat oven to 350°F.
  2. Butter the bottom of a cast iron skillet or casserole dish with softened butter.
  3. Slice potatoes about 1/4 inch thick and place in a mixing bowl.
  4. Add olive oil and U Wanna Pizza Me seasoning, tossing well to coat evenly.
  5. Arrange potatoes in the skillet in a layered, slightly overlapping pattern.
  6. Cover with foil and bake for 1 hour, until tender.
  7. Remove foil, increase heat to 425°F, and return to oven for about 15 minutes, until golden and crisped to your liking.
  8. Remove from oven and let rest for 5–10 minutes.
  9. Finish with a squeeze of lemon juice and fresh chopped parsley before serving.

Pro Tip:

Slice the potatoes evenly—this ensures they cook at the same rate and gives you that perfect layered texture.

Make It Your Own:

  • Add grated parmesan before the final crisp for extra crunch
  • Swap butter for olive oil for a lighter version
  • Add garlic or shallots between layers
  • Use sweet potatoes for a different twist

What To Serve It With:

Serve alongside grilled meats, roasted chicken, or as a standout side at any dinner table. These also hold their own as a centerpiece dish.
