If you love potato salad but want something a little lighter, this cauliflower version checks all the boxes.
Made with hard-boiled eggs, crunchy vegetables, and Pickle Ya Fancy, it delivers that classic deli-style flavor with plenty of tang and texture while keeping things low-carb and gluten-free.
Preparation:
- Place cauliflower florets in a steamer basket over boiling water and steam for 4 minutes.
- Allow the cauliflower to cool slightly, then place it in a clean kitchen towel or cheesecloth and gently squeeze out as much moisture as possible.
- Roughly chop the cauliflower into bite-sized pieces resembling traditional potato salad.
- Separate the hard-boiled egg yolks from the whites. Chop the whites and set aside.
- In a large bowl, mash the yolks and whisk together with mayonnaise, Dijon mustard, relish, and Pickle Ya Fancy seasoning.
- Add cauliflower, chopped egg whites, celery, and onion. Stir gently until evenly coated.
- Taste and adjust seasoning with additional Pickle Ya Fancy, salt, or pepper if desired.
- Cover and refrigerate for at least 1 hour before serving.
