Ingredients

  • 1 ea fennel bulb

  • 1 jar fresh grapefruit slices
  • 2 ea breakfast radish, sliced very thin
  • 1 tbl toasted pine nuts
  • 1/2 bu watercress
  • 1 ea lemon
  • 2 tbl olive oil
  • 1 tsp sugar
  • 1 tsp Veg-geez Louise seasoning

This grapefruit and fennel salad is all about fresh flavor and crunch.

Juicy grapefruit, shaved fennel, peppery watercress, and crisp radish come together with Veg-Geez Louise for a bright, refreshing salad that works especially well alongside richer dishes.

Preparation:

  1. Cut the top from the fennel bulb, quarter it, and remove the core.
  2. Thinly shave the fennel using a sharp knife or food processor.
  3. Add the shaved fennel to a large bowl with the grapefruit, radish, and pine nuts.
  4. Squeeze fresh lemon juice over the mixture, then add olive oil, sugar, and Veg-Geez Louise seasoning.
  5. Toss well until everything is evenly coated.
  6. Roughly tear the watercress and add it to the bowl.
  7. Gently fold everything together and serve.
