  • 4-6 People

  • Time: 30 Minutes

  • Difficulty: Easy

Ingredients

  • 2 ear corn

  • 3 ea. peaches, split and pitted
  • 1/2 ea. red onion, diced
  • 1 ea. red bell pepper, diced
  • 1 ea. jalapeño pepper, seeded and chopped
  • 1/2 bu. chopped scallion
  • 1 Tbl. chopped cilantro
  • 1 Tbl. sugar
  • 2 tsp Suave Agave seasoning
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • Juice of three limes

Sweet, Smoky, and Made for Summer

This grilled corn and peach salsa tastes like peak summer in a bowl.

Charring the corn and peaches brings out their natural sweetness while adding a little smoky depth. Toss everything together with Suave Agave, and you get a fresh salsa with the perfect balance of sweet, savory, and a little Southwestern heat.

Preparation:

  1. Preheat a grill over high heat.
  2. Remove the husks from the corn and lightly coat the ears with oil.
  3. Place the corn on the hot grill and cook, turning occasionally, until tender and nicely charred on all sides.
  4. Lightly coat the peaches with oil and grill on both sides until they develop good grill marks and begin to soften.
  5. Remove the corn and peaches from the grill and allow them to cool.
  6. Cut the corn kernels from the cob and dice the grilled peaches.
  7. Add the corn and peaches to a large bowl with the remaining ingredients and Suave Agave seasoning. Toss well to combine.
  8. Cover and refrigerate for at least 1 hour to let the flavors come together before serving.

Pro Tip:

Give the corn and peaches enough time on the grill to develop some real char. Those caramelized edges are what give this salsa its smoky-sweet flavor instead of making it taste like a standard fresh salsa.

Make It Your Own:

  • Add diced jalapeño for more heat
  • Fold in avocado just before serving
  • Add black beans to make it heartier
  • Finish with extra lime juice and fresh cilantro
  • Swap peaches for nectarines when they're in season

What To Serve It With:

Grab the tortilla chips and go to town, or spoon it over grilled chicken, fish, shrimp, or tacos. It also makes a killer topping for a summer rice bowl.
