Ingredients

  • 8 small potatoes

  • 1 cup Colby Jack Cheese
  • 3 Tbl Dilly Gent
  • 2-3 Tbl Olive Oil
  • 2 Tbl chopped scallions
  • 1 tsp lemon juice
  • 1/2 cup mayo
  • 1/2 cup sour cream

These crispy cheesy potatoes are everything you want in a snack—golden edges, melty cheese, and a perfect bite every time.

Finished with Dilly Gent, they bring that tangy, dill-forward punch that pairs perfectly with a creamy dipping sauce and keeps you going back for more.

Preparation:

  1. Preheat oven to 425°F.
  2. Boil potatoes for about 15 minutes, until fork tender. Drain and let cool slightly.
  3. Line a baking sheet with parchment paper and drizzle small pools of olive oil across the surface. Sprinkle each with Colby Jack cheese.
  4. Place potatoes on top of the cheese and use the bottom of a glass to gently smash them down.
