- 3 Tbl Dilly Gent
- 2-3 Tbl Olive Oil
- 2 Tbl chopped scallions
- 1 tsp lemon juice
- 1/2 cup mayo
- 1/2 cup sour cream

These crispy cheesy potatoes are everything you want in a snack—golden edges, melty cheese, and a perfect bite every time.

Preparation:
- Preheat oven to 425°F.
- Boil potatoes for about 15 minutes, until fork tender. Drain and let cool slightly.
- Line a baking sheet with parchment paper and drizzle small pools of olive oil across the surface. Sprinkle each with Colby Jack cheese.
- Place potatoes on top of the cheese and use the bottom of a glass to gently smash them down.
- Drizzle with more olive oil, sprinkle generously with Dilly Gent, and top with additional cheese.
- Bake for 20–25 minutes, until crispy and golden.
DIP (Creamy Dilly Sauce)
In a small bowl, mix together:
- mayo
- sour cream

Stir until smooth and serve chilled.
