Fresh, Light, and Built to Impress

These cucumber cups with smoked salmon dip are the perfect bite-sized appetizer—fresh, light, and packed with flavor.

Finished with Surfs Up, they bring a bright, coastal note that pairs perfectly with rich smoked salmon and keeps things balanced.

Preparation:

  1. Peel the cucumber completely and slice into 1-inch rounds.
  2. Using a melon baller, scoop out the center of each slice, leaving the bottom intact to form a cup.
  3. In a food processor, combine remaining ingredients and pulse until smooth and creamy.
  4. Spoon or pipe the smoked salmon mixture into each cucumber cup.
  5. Refrigerate until ready to serve.

Pro Tip:

Use a piping bag with a star tip for a clean, elevated presentation—this makes a big visual difference for very little effort.

Make It Your Own:

  • Add capers for extra briny flavor
  • Finish with fresh dill or chives
  • Add a squeeze of lemon for brightness
  • Swap smoked salmon for crab or shrimp

What To Serve It With:

Serve as a light appetizer for parties, brunch, or holiday gatherings. These pair well with other small bites and seafood dishes.
