- 1 T It's All Greek To Me seasoning
- 2 T Red wine vinegar
- 2 T Olive oil
- 2 tsp Soy sauce
- 1/4 C Italian dressing (we love Ken's)
- 4 Soft torpedo rolls
The Marinade Does All the Work
Chicken spiedie sandwiches are all about one thing—the marinade.
Let it sit long enough, and you get juicy, deeply flavorful chicken with that perfect grilled char. Using It’s All Greek To Me, this version brings a bright, herby, slightly tangy flavor that makes these sandwiches ridiculously good.
Preparation:
- Cut chicken breasts into large chunks, about 1.5 inches. Place in a container or large resealable bag.
- Add marinade ingredients along with It’s All Greek To Me seasoning. Mix well to coat evenly.
- Refrigerate for at least 24–36 hours, shaking or mixing occasionally to redistribute the marinade.
- Preheat grill for 10–15 minutes until hot.
- Thread chicken onto skewers, about 4–5 pieces per skewer.
- Grill over medium-high heat for 3–4 minutes per side, rotating to get a nice char on all sides.
- Place skewers into torpedo rolls, then slide the skewers out, leaving the chicken inside the bread.
- Serve immediately.
Pro Tip:
Don’t rush the marinade—this is where all the flavor comes from. The longer it sits, the better it gets.
