Bright, Briny, and Built for an Easy Dinner
This Sicilian roasted cod is proof that a simple piece of fish doesn’t need much to become a seriously good dinner.
Juicy tomatoes, briny olives, garlic, onion, parsley, and lemon roast right on top of the cod, while U Wanna Pizza Me? brings everything together with plenty of savory Italian herb flavor.
Preparation:
- Preheat oven to 425°F.
- Arrange the cod fillets in a glass baking dish.
- Rub the fish with half of the olive oil, chopped garlic, and U Wanna Pizza Me? seasoning.
- In a bowl, toss together the tomatoes, olives, onions, parsley, and remaining olive oil.
- Spread the tomato and olive mixture evenly over the cod.
- Top each fillet with a slice of lemon.
- Bake for 15 minutes, then check the fish for doneness.
- Continue cooking as needed until the cod is opaque and flakes easily with a fork.
- Serve hot, spooning the roasted tomato and olive mixture over each piece of fish.
Pro Tip:
Cod can go from perfectly tender to dry pretty quickly. Start checking it at the 15-minute mark and pull it from the oven as soon as it flakes easily.
Make It Your Own:
- Add capers for an extra briny bite
- Toss in a few sliced pepperoncini for some tang
- Add a pinch of crushed red pepper for heat
- Finish with extra fresh parsley and lemon juice before serving
What To Serve It With:
Serve with roasted potatoes, rice, couscous, or crusty bread to soak up the tomato and olive juices. A simple green salad or roasted vegetables also works perfectly alongside it.
