Roasted Asparagus and Prosciutto Bundles (GF)

Ingredients

  • 1 bu. asparagus

  • 8 sl. Prosciutto
  • 2 Tbl. Grain mustard
  • 1 Tbl. Olive oil
  • 1/2 ea. lemon, juiced
  • 2 tsp. Veg-geez Louise seasoning

Simple, Elegant, and Full of Flavor

These roasted asparagus and prosciutto bundles are one of those dishes that look impressive but couldn’t be easier to make.

Finished with Veg-Geez Louise, they get a bright, herby lift that balances the salty prosciutto and makes this a perfect side for any meal.

Preparation:

  1. Preheat oven to 375°F.
  2. Trim about 1 inch off the bottom of the asparagus and divide into 4 equal bundles.
  3. In a small bowl, whisk together mustard, oil, lemon juice, and Veg-Geez Louise seasoning.
  4. Toss asparagus in the mixture until evenly coated.
  5. Wrap each bundle with two slices of prosciutto.
  6. Place bundles on a piece of foil and fold into a sealed pouch.
  7. Roast for about 15 minutes, until asparagus is tender.

Pro Tip:

Don’t overcook—keeping a little bite in the asparagus gives you better texture and balance with the prosciutto.
